No-bake chocolate cake aka my mom's bd

As it was my mom's birthday I tried to make no-bake chocolate fudge cake for one more time. The recipe was already published here. This time it wasn't as sweet as the first time, because instead of semi-sweet chocolate I used 100 g of 70% cacao chocolate and only 200 g of semi-sweet chocolate. Also I didn't add any sugar. Tasted so much better!

 And this is how we gift-wrapped my mom's present.. ;) She loves that piglet from my former Etsy store - Mother Seal designs!

Oven baked potatoes - easy, interesting and very tasty


All you need is:
-potatoes
-sesame seeds
-rosemary (I replaced it with thyme)
-cumin seeds
-sweet paprika powder (I used it experimentally and it came out just fine)

Heat the oven to 225C.
Wash potatoes and cut them in halves (leaving the skin).
Sprinkle the spices and seeds on little plates.
Dip the  flat sides of the potato halves in spices or seeds.
After that oil the skin of the potatoes.
Prepare the pan laying it with parchment paper and place the potatoes onto it with the flat sides up.
Bake for 20-25 min or until soft.

No-bake chocolate fudge cake

Thanks to Bonnie from "a crafty mess" and her wonderful cooking book, yesterday I made delicious chocolate cake. It was not only very tasty but also easy and fast to make. It came out very sweet, so if you make it be careful with the amount of sugar added.


Ingredients:
8 oz (225g) semisweet chocolate, broken into pieces;
1 cup unsalted butter;
3 tablespoons black coffee;
¼ cup light brown sugar;
a few drops of vanilla extract;
8oz (225g) graham crackers, crushed;
½ cp raisins;
¾ cup chopped walnuts

Line an 8 inch (20 cm) round cake pan with baking parchment. Melt the chocolate and butter with the coffee, sugar and vanilla extract in a saucepan over low heat. Stir in the crackers, raisins and walnuts and stir well. Spoon the mixture into the prepared pan. Transfer to the refrigerator and let set for 1-2 hours.Turn out and cut into thin slices to serve.

Birthday

oh we just had absolutely great bd celebration! The only rule for today was to do all the things Eric likes to do the best in Latvia. So here it goes.

1. Chocolate cake in the morning (and I'm the proud baker!). It came out delicious, although maybe a bit too sweet, but what can you expect from the mix of pure chocolate, marmalade and cookies. I got the recipe from Bonnie's cooking book - I will post the recipe tomorrow.



2. Kebab for the early dinner. If the kebab isn't at least in top 10 best foods in the World then I don't know what is. And if there is anyone who is claiming that's not true they haven't tasted Sultan kebab in Riga!

3. TRAMPOLINES! Eric loves trampolines and we happen to have trampolines near by our apartment that works 24/7 Imagine that? How awesome is that?
 



 

 

 

4. And to end the Monday evening nicely we had a few beers at Nabaklab. Not some whatever beer but Brengulu beer that is Eric's absolute fave! Brengulu is thick, dark and creamy Latvian microbrew with the lingering taste of rye and pumpkin seed (this sentence was added by Eric). To summarize, if you like beer this is absolutely delicious and def worth trying (ever single Latvian will confirm that). :)

My friend had a birthday a few days ago. She is my hairdresser and owns a beautiful boutique/hairsaloon - Mademoiselle. I couldn't figure out what to give her as a present for a very long time. But then I found this awesome white 2-level cake plate. And to make it more personal (and as she loves roses), I hand painted roses on both plates. And here is how it looked at the end.

Eric's jacket

I love this jacket more than Eric does. He got it some time ago at gentlemen store - CRITTENDEN in Midway, KY. You can read about it in my previous post here.

UPGRADE: Mr.Rawlings and his store CRITTENDEN have been featured in Lexington Paper! So awesome! and now we know that even coach Calipari shops there. ;)

Just check out how well done it is and how many great details it has. It looks so good with a knitted tie and cravat! Love it!

One minute films

I'm a huge fan of short films, because I believe that is an incredible talent to be able to tell the story in 5-15 minutes and do it well. I adore short films because of their ideas and intensity. Not that I'm saying longer films  are bad or made by not talented people. It just seems making a short film is much tougher then making longer film.
This is even crazier. Imagine if you needed to tell a good story in 60 seconds. Can you do that? I personally, can't, but some people are very talented in that.
Filminute is the International One-Minute Film Festival where everyone can submit their one minute film. The only rule is it should be exactly 60 seconds long. Tough, right?

Flea market at VEF

Latvian's don't  really have flea markets. The only one we have in Riga is named "Latgalīte" and it is pretty amazing place where you can get anything. Literally anything. Old photos, electronics, old army stuff, furniture, suitcases, illegal CDs, stolen bikes etc. Latvians joke if your bike is stolen just go to Latgalite on the next day and you can buy it back for $20. Also it isn't the most pleasant place in the world, mostly because there are too many old drunken guys hanging out as well as some people that look like willing to stole your wallet....so I was pretty happy to read that there are some people in Riga organizing flea market every Saturday in the different location.
We went to the first two and it was nice. Not as much stuff as we hoped for but still a lot of interesting things. So I really hope this tradition will live and soon Riga will be well known because of its awesome flea market. :)

painting

Good friend of mine has a birthday today. Some time ago she mentioned she would love if we could paint her a painting as a birthday present. Done and done. It took as a few days to figure out what can we draw because none of us is particularly good in drawing, but here you can see the result. And I don't know why it's a giraffe...well, because they are awesome and the balloon looks like a peppermint candy...
Aren't we super talented??? :D

the big adventure

You won't believe but I have never walked a dog in my life! So I was so excited and at the same time a little bit nervous when my friend offered me to do that a few days ago. So we took Dandy and had a little walk to the nearest park. Oh, that was fun! :)

Nouvelle vague

Yesterday we went to Nouvelle vague show. They create cover versions of popular punk rock, post punk and new wave songs in a bossa nova style. The music was great and the show was even better! I was really pleasantly surprised because I have never heard them before. But now after yesterday I put this show in my "awesome shows of the bands I have never heard of before" list. :)

a little bit of fashion

When we still were in KY we went to Midway (tiny little city near by Lexington) one day and found this small and awesome gentleman store "CRITTENDEN" owned by Mr.Crittenden Rawlings who has worked for Ralph Lauren and other famous designers.

The store is super awesome, and Mr. Rawlings was really kind and helpful. Eric got there a really nice tailored jacket (pictures will be posted some other day). And I was lucky enough to put my little hands on vintage Ralph Lauren jodhpurs (riding pants) for ridiculously cheap. He doesn't really sell vintage pieces in his store, but had some of them laying around there. I put those pants on and fell in love immediately - the style, the fabric, the color - perfect! Now I need to find a nice shirt and shoes to wear them with.
